PURPOSE:To industrially and advantageously obtain a fabricated food, having heat resistance and formable into an optional shape, by adding acidic substances, such as alkaline (earth) metal salts or organic acids, to a gelan gum solution prepared by dissolving gelan gum while heating. CONSTITUTION:A 0.03-2wt.% aqueous solution of gelan gum prepared by dissolving the gelan gum while heating is prepared. Alkaline (earth) metal salts, e.g. calcium lactate, magnesium chloride, sodium phosphate, sodium chloride and/or organic acids, e.g. citric acid or malic acid, in an amount of preferably 0.01-0.5wt.% (in the case of 0.5wt.% gelan gum concentration) are added to the above-mentioned solution to afford the aimed food. |
