<p>A compound having the general formula: I wherein X is an alkylene radical containing from 1 to 3 carbon atoms and Y is a residue of L-ascorbic acid having the formula: II or a residue of D-isoascorbic acid having the formula: III and the corresponding salts thereof. The compounds are useful as surfactants and may be used as antioxidants for foodstuffs.</p> |
