PURPOSE:To prepare a spit-roasted meat having excellent preservability, taste, palatability and flavor and suitable as a travel food or instant food, by alternately spitting meat and skin of chicken on a spit, immersing in a sauce and subjecting the seasoned product to smoking, drying, vacuum packaging, sterilization in hot water and cooling. CONSTITUTION:Meat 1 and skin 2 of chicken are divided into small pieces of about 6g and five pieces are alternately spitted on a spit 3. The spitted raw material 4 is immersed in a mixed sauce composed of e.g. about 15wt.% of sugar, about 30wt.% of soy, about 10wt.% of MIRIN (sweet rice wine for seasoning), about 3wt.% of tasty substance, about 1.6wt.% of Guinea pepper, about 4 wt.% of a thickener, about 36wt.% of water and about 0.4wt.% of other additives for about 24 hr. The seasoned material is softened by blasting steam of about 80 deg.C for about 2 hr and is smoked in a smoking chamber for about 1 hr. The smoked material is dried at about 60 deg.C for about 1 hr, packed in a vacuum-package P, sterilized by immersing in hot water of about 90 deg.C for about 30 min and artificially cooled. |
