PURPOSE:To obtain a jelly containing a sol as a core, by sealing a sol substance at the core part and thermally sterilizing the product using an enzyme. CONSTITUTION:Starch, gelatin and pectin are poured into a mold and gelatinized to form a part to be used as a core sol. A solution of gelan gum is separately prepared and mixed with an enzyme such as protease. The circumference of the above gel is coated with the gelan gum solution and cooled to a temperature below the gel temperature of the solution to obtain a jelly wherein both core and skin parts are gelatinized. Subsequently, the two-layered gel is put into a water-tank maintained at 40-70 deg.C and kept at the temperature. The inner gel is exclusively converted to a sol by the action of the enzyme to form a jelly containing a sol at the core part. The product is heated to inactivate the enzyme and obtain the objective jelly. |
