PURPOSE:To prepare the titled food having light palatability of expanded food and mixed taste of a sweetener and taste-improving agent and useful as a cake such as rice cube, by attaching a sweetener and a taste-improving agent to an expanded raw material. CONSTITUTION:The objective food is prepared by coating the surface of (A) an expanded food prepared by forming a fiber-rich raw material (preferably taro or yam) into a prescribed size, drying the formed product and heating and exposing the raw material to reduced pressure atmosphere to effect the expansion with (B) a viscous sweetener and then applying (C) a test-improving agent to the surface of the component B taking advantage of the tacky adhesivity of the component B. The component B is preferably starch syrup, etc., and the component C is preferably sesame, etc. |
