PURPOSE:To prepare a soya milk for the preparation of bean cured, by crushing soybean, carrying out 1st boiling of the soybean at a low temperature in the absence of a defoaming agent, squeezing and separating the product into soya milk and bean curd refuse, adding the soya milk with a defoaming agent, etc., and carrying out 2nd boiling of the milk at a high temperature. CONSTITUTION:Soybeans are crushed and subjected to 1st boiling treatment at a low temperature (60-70 deg.C) in the absence of a defoaming agent. The boiled product is separated into soya milk and bean curd refuse by squeezing. The obtained soya milk is added with a defoaming agent or defoamed e.g. with a deaerator and is subjected to 2nd boiling treatment at a temperature up to the normal treatment temperature (90-105 deg.C) to obtain the objective soya milk. |
