PURPOSE:To remarkably enhance the coating performance, also enhance oxidization stability and make handling easier by coating the surface of fat as a core material with water soluble coating containing crosslinked protein. CONSTITUTION:Fat and protein, and if necessary, a water soluble substance are emulsified, to which a protein crosslinking agent is added and crosslinking reaction is carried out. Then, the same is cooled after being spray dried and completing crosslinking reaction, and coated powdery fat and oils, the surface of which is coated with a water soluble coating agent containing crosslinked protein with the crosslinked surface of said fat and oils, is manufactured. As said crosslinking agent, formalin, gluten aldehyde, tannic acid or the like is suitable. Also, it is proper to blend 10-400pt.wt. of protein, 0.05-10pt.wt. of the crosslinking agent and 0-400pt.wt. of the water soluble substance per 100pt.wt. of fat and oils. |
