PURPOSE:To prepare a vegetable extract having strong taste and flavor of raw vegetable, good preservability and extremely high quality, by treating squeezed juice or extracted liquid of vegetables with an ultrafiltration membrane in raw state. CONSTITUTION:Vegetables especially those belonging to Liliaceae family, Zingiberaceae family, Cruciferae family, etc., are separated into solid and liquid optionally after the addition of a proper amount of water. The obtained squeezed juice or extracted liquid is treated in raw state with an ultrafiltration membrane having a frictional molecular weight of about 6,000-20,000 and, as necessary, the obtained vegetable extract is concentrated. |
