PURPOSE:To enable easy and quick cooling of a bean jam soup even in summer season without using a complicate cooling apparatus and to suppress the proliferation of living bacteria, by cooling a bean jam soup in a tank under stirring with evaporated gas of liquid nitrogen passing through a piping in the tank. CONSTITUTION:A bean jam soup 2 of 50-60 deg.C prepared by a bean jam preparation apparatus is thrown into a tank 1 and cooled to 1-15 deg.C with evaporated gas of liquid nitrogen passing through a piping 3 in the tank while stirring the soup with a stirrer 6. |
