摘要 PURPOSE:To enable production of bean curd in a short time, by coarsely grinding dried soybeans, blending the ground soybeans with a small amount of water, pulverizing the blend by a cutter having two-stage grinding mechanism, adding water to the pulverized blend, squeezing and producing soybean milk and bean curd. CONSTITUTION:Dried soybeans and/or peeled soybeans are coarsely ground. Then the coarsely ground soybeans together with a small amount of water are pulverized by using a cutter having two grinding mechanisms consisting of stationary blades 4 and 16, cutter rings 7 and 19, rotating blades 5 and 17 and slits 6 and 18. The pulverized soybeans are directly squeezed or blended with water and squeezed to separate soybean refuse and the prepared soybean milk is processed by a well-known process to produce bean curd. Namely, in this process, water immersion process of soybeans and swelling process which are essential processes of existing production of bean curd are omitted and soybean milk is directly produced from dried soybeans to give bean curd. Bean curd can be produced in a short time without using a large amount of water to enormously reduce labor and manufacturing cost.
