PURPOSE:To produce a delaying gelatinous material such as food, drug and industrial chemical without subjecting to heating process, by using both gelan gum and an alkaline earth metallic salt. CONSTITUTION:An alkaline earth metallic salt and/or an acidic substance such as organic acid or inorganic acid is added to about 0.03-2wt.% aqueous solution gelan gum dissolved under heating or the aqueous solution of gelan gum is added to a food, drug or industrial chemical containing the alkaline earth metallic salt and/or the acidic substance such as organic acid or inorganic acid and the alkali metallic salt is added to the solution. |
