PURPOSE:To produce LL packed TOFU (bean curd) preservable for a long period, by immersing peeled soybeans in water at a given low temperature to give soybean milk, adding fixed amounts of glucono delta lactone and bittern to the soybeans, packing to and sealing in a container and sterilizing under heating. CONSTITUTION:Raw material soybeans are peeled and immersed in water at 15 deg.C for 5-8hr in a chamber air-conditioned at 15 deg.C. Then the soybeans are ground, boiled and separated to give soybean milk at about 80 deg.C and the soybean milk is quenched to 1-5 deg.C and degassed. Then the soybean milk is incorporated with 0.0014-0.0024wt.% based on the soybean milk of glucono delta lactone and 0.002-0.001wt.% bittern having 12 degrees Baume or 0.008-0.0014wt.% bittern, packed into a container and sealed. The packed soybean milk is sterilized by high-temperature water at about 120 deg.C in a sterilizing machine for 30-45min and coagulated to give LL packed TOFU. |
