PURPOSE:To obtain the titled flavor having extremely excellent taste and flavor and strong and excellent heat-resistance and durability, by treating a food material containing milk fat with a lipase produced by a specific microorganism. CONSTITUTION:The objective flavor is produced by treating a food material containing milk fat (e.g. cow's milk) with a lipase produced by a microorganism belonging to Chromobacterium genus (preferably Chromobacterium viscosum). The amount of the lipase is preferably about 0.2-0.5wt.% based on the weight of the food material. |
