The invention relates to a process for preparing xylose from maize consisting of maize plants and/or of constituent organs. The process consists a in placing the maize in contact with an aqueous bath until most of the free carbohydrates are extracted therefrom, and then b in the event of lipids being present in the maize, in placing the residual solid materials recovered at the end of operation a in contact with a liquid bath based on lipophilic solvent, in particular 1,1,2-trichloro-1,2,2-trifluorethane, until most of the lipids contained in these materials are extracted, and then c in placing the residual solid materials obtained at the end of the preceding operation in contact with a bath of strong inorganic acid, in heating the said bath until the hemicelluloses are hydrolysed, in filtering it so as to separate the solid materials therefrom and, after neutralisation, in separating the xylose from the liquid phase. The residual solid materials recovered at the end of operation c may be dried for the purpose of upgrading them, especially for forming fibre boards. Furthermore, the carbohydrates obtained at the end of operation a and the lipids obtained at the end of operation b can also be recovered for upgrading, especially in the food sector. The process of the invention makes it possible to manufacture xylose under remarkable economically profitable conditions.
