<p>DIRECT EXPANDED, HIGH FAT, FARINACIOUS PRODUCT AND PROCESS THEREOF A direct expanded farinaceous product having an oil content of at least 6% made by mixing a farinaceous material with an oil content ranging from 6 to 16% and an effective amount of water; then incorporating a gas into the mixture to provide and aerated cell structure upon extrusion; and extruding the mixture at effective, temperature, pressure and shear effective to partially gelatinize but not dextrinize the starch in the farinaceous material, which product has a foamy texture and maintains its structural integrity in cold and hot fluids.</p> |
