The invention relates to the field of aromatic products, and especially to that of aromatherapy. The invention relates to a new method of encapsulation of solid or liquid volatile products, which consists in dispersing one or more volatile products in a solution of gelatin, in carrying out coacervation of the globules and in tanning the shell of these globules with formaldehyde. The microgranules thereby obtained find application as an aromatising agent or as a means of preservation of volatile products.
