PURPOSE:To prepare a Western-type rice cracker having softly finished texture, giving excellent feeling to the tooth and having light palatability, by adding cow's milk to raw materials for dough containing glutinous rice flour, fats or oils, sugar and albumen and baking the dough in an oven while extracting steam from the oven. CONSTITUTION:A raw material for dough composed of glutinous rice flour, about 1/2pts.wt. of fat or oil (based on 1pt.wt. of the rice flour), a sugar and albumen is added with cow's milk or cow's milk and water at an amount to attain a total water-content of 35-45wt.% and the mixture is kneaded to obtain a dough. The dough is put into an oven to start baking. During the baking, the door of the oven is temporarily opened to release the steam in the oven and the baking of the dough is continued.
