PURPOSE:To prepare a multiphase emulsified composition having high emulsion stability, by adding lecithin to a water in oil type composition, which is prepared by adding an aqueous phase to a liquid phase prepared by dissolving propylene glycol fatty acid ester in fats and oils or water, to convert the phase of said composition. CONSTITUTION:One or more compound selected from a group consisting of propylene glycol fatty acid ester, fatty acid monoglyceride, polyglycerine fatty acid ester, sorbitan fatty acid ester and sugar fatty acid ester is dissolved in fats and oils or/and water to prepare an oil or aqueous phase. The aqueous phase is added to the oil phase to prepare a water in oil type emulsion composition and lecithin is added to this composition to convert the phase thereof to prepare an aqueous multiphase emulsion composition. It is suitable to adjust the addition amount of fats and oils to 60% or less by wt. of the total composition in order to stabilize the multiphase emulsion composition. Lecithin is suitably added in an amount of 0.005-0.2wt.% of the total composition. |
