PURPOSE:To obtain the titled soft food retaining the external shape of UME, having good texture, by soaking UME in an alcohol, removing the alcohol, drying and immersing treated UME in separately prepared UME essence to remove the strongly acid component of UME. CONSTITUTION:(A) Green UME having preferably 90-95 aging degree is washed with water, dehydrated, mixed with (B) preferably 70wt.% based on the weight of the component A of an alcohol (e.g. low-class distilled spirits having 20-35 deg.), pressed by placing a weight having 0.5wt.% the weight of the component A, then immersed in (C) a warm aqueous solution of sodium bicarbonate and dried preferably at 35-40 deg.C. Then treated UME is soaked and swollen in essence which is separately prepared as UME extract by freezing the component A, pressing to give juice and adding (D) a sweetener such as honey to the juice. The UME is taken out and only the surface is dried preferably at 30-35 deg.C to give the aimed food. |
