PURPOSE:To prevent excess gelatinization or formation of the so-called 'DANGOMESHI' (lumps of unevenly cooked rice), by providing an inner vessel having many jetting holes at the bottom in the interior of a pressure cooker, placing rice and water therein and blowing steam from the jetting holes at the bottom. CONSTITUTION:An inner vessel 5 having many perforated jetting holes 51 at the bottom is placed in the interior of a pressure chamber 4. Steam is injected from the outer (bottom) surface of the inner vessel 5 to apply pressure and rice and water are simultaneously introduced. Water is prevented from sagging from the jetting holes 51 by pressure difference. In cooking rice, steam under a high pressure is fed to the outer (bottom) surface. |
