PURPOSE:A yeast, having a galactokinase as a constituent enzyme, and the utilization of galactose in preference to that of glucose, and incapable of utilizing fructose though capable of utilizing the glucose due to the absence of hexonase. CONSTITUTION:A yeast, having glucokinase and galactokinase as a constituent enzyme, deficient in hexokinase, and having the properties of utilizing galactose preferentially in a mixed saccharide solution containing the galactose even in the previous cultivation in a culture medium containing a utilizable saccharide other than the galactose. The mycological properties of Torulopsis holmii KY-5 (FERM-P No 5766) which is this yeast are most closely resemble the Torulopsis holmii except the deficiency in fermentation property of fructose and reffinose. The yeast is found from kefir globules which are the seed yeasts of fermented milk kefir. |
