<p>PURPOSE:To prepare an alcoholic drink, etc., rich in caproic acid and/or ethyl caproate, by using a cerulenin-resistant mutant yeast produced by proliferating a yeast variant in a cerulenin-containing medium. CONSTITUTION:Various kinds of yeast are mutated by physical process (e.g., ultraviolet irradiation) or chemical process (suspension in a solution of a mutagenic agent such as ethylmethane sulfonate) and the variant is transferred to a cerulenin-containing medium and cultured at about 30 deg.C. The grown yeast strain is separated and a strain having high activity to produce caproic acid is selected from the strain. The obtained cerulenin-resistant strain has increased productivity of medium fatty acid including caproic acid compared with the parent strain. Since any variant yeast derived from SAKE yeast, SHOCHU yeast, beer yeast, wine yeast and bakers' yeast is imparted with high productivity of caproic acid, a SAKE (refined Japanese rice wine) produced by the use of the yeast is rich in ethyl caproate having an apple-like flavor.</p> |
