PURPOSE:To obtain the titled compound advantageously on an industrial scale, by reacting aldopentose or 6-deoxyhexose with an organic nitrogen base in a polar solvent in the presence of a copolymer composed of acrylic acid or methacrylic acid and a vinyl compound. CONSTITUTION:The objective compound of formula (R is H or CH3) separated from pineapple juice and useful as an aromatic substance having sweet and fruity aroma is produced by reacting an aldopentose such as L- or D-arabinose, D-xylose and/or D-ribose or 6-deoxyhexose such as L-rhamnose, L-fucose and/or 6-deoxy-D-allose with an organic nitrogen base (primary or secondary amine) in a polar solvent in the presence of a copolymer composed of acrylic acid or methacrylic acid and a vinyl compound.
