In a process for the biotechnological preparation of glycosides from the components aglycone and sugar, plant cells which have been cultivated in vitro are incubated in a nutrient medium in the presence of the aglycone. When a natural substance which can undergo glycosidation, in particular an odorising and/or flavouring substance, is employed as aglycone and the incubation is carried out under aerobic conditions, the result is the corresponding glycosides in good yield and free of by-products impairing the odour or flavour. <IMAGE>
