PURPOSE:To extend the freshness keeping period of the sucked raw shellfish, by enhancing the concn. of oxygen in a container. CONSTITUTION:The shucked fresh raw shellfish is received in a container composed of a resin excellent in a gas barrier property and the container is filled with oxygen gas to be enclosed in a top film. It is necessary to set the concn. of oxygen in the space part of the container to 30% or more, pref., 50% or more. By this method, an extremely good freshness keeping property is obtained and the shucked raw shellfish having taste peculiar to that of fresh shellfish can be supplied to a consumer in a fresh state. |
