PURPOSE:To obtain the titled composition effective in remarkably increasing the volume of a cake by baking and giving a cake having soft texture and meltable easily in the palate, by compounding an edible liquid oil or fat, sodium citrate, a polyglycerol polyhydroxycarboxylic acid ester and water at specific ratios. CONSTITUTION:The objective composition can be produced by adding 0.005-2.0wt.% of a polyglycerol polyhydroxycarboxylic acid ester to 94-99.8wt.% of an edible liquid oil or fat, adding 0.1-3.0wt.% of sodium citrate dissolved in water and adjusting the water-content of the product to <=1.0wt.%. |
