PURPOSE:To efficiently hydrolyze fats and oils, by using lipase produced by a variant of Candida cylindracea, having an acting temperature >= a specific temperature. CONSTITUTION:Strain U-3 (FERM P-9365) obtained by varying and modifying Candida cylindracea ATCC 14830 strain is cultivated in a medium containing a carbon source, a nitrogen source and inorganic salt to give lipase having the following physical and chemical properties. Action: having high action on short-chain fatty acid ester and hydrolyzing triglyceride ester bond to form a fatty acid and glycerin. Optimum pH and stable pH: optimum pH is about 7 and stable range is pH 4-7: Optimum temperature and temperature stability: optimum temperature is about 50 deg.C and stable up to 50 deg.C at pH 7. The enzyme has >=40 deg.C acting temperature and is useful for hydrolyzing high-melting fats and oils such as beef tallow and liquid fats and oils. |
