PURPOSE:To prepare coffee beans having excellent taste and flavor in shortened roasting time, by roasting green coffee beans with a roaster having a rotary drum, an infrared heater and a hot-air circulation channel at specific positions in the roasting oven. CONSTITUTION:Green coffee beans 20 are charged through a hopper placed above an oven made of a heat-insulation wall into a nearly cylindrical rotary drum 2 having a number of perforations and positioned nearly at the center of the oven 1. A motor 6a is rotated and the green coffee beans 20 are heated by the radiant heat radiated from infrared heaters 4a, 4b attached to the inner wall of the oven 1 and the lower part of a duct 5 while rotating the rotary drum 2. At the same time, hot air heated wit the above heater 4a is sent to a hot-air circulation channel 16, heated again with the infrared heater 4b and blasted against the green coffee beans 20 in the rotary drum 2. The roasting time of coffee beans can be remarkably shortened by this process.
