PURPOSE:To obtain candy being readily crushed with the teeth, not attaching itself to the gum, melting well in the mouth, by blending maltotetraose with xanthan gum and cyclodextrin or maltotetraose with a dextrin and a sucrose fatty acid ester. CONSTITUTION:For example, a mixture of sucrose, thick malt syrup, water, maltotetraose, xanthan gum and cyclodextrin is heated, boiled down and then cooled to give the aimed candy. Or, a mixture of sucrose, thick malt syrup, water, maltotetraose, dextrin and a sucrose fatty acid ester, boiled down and cooled to give candy.
