Wine free from alcohol and volatile cpds., for use in making wine-based drinks and re-constituted wine, is made by continuous treatment of the original drinking wine in a plate column at b.pt. under the existing pressure, to obtain three fractions consisting of ethanol and more and less volatile components. - The material from the column base is treated continuously with resin to harmonise and improve the quality, and may then be concentrated.
