PURPOSE:To obtain readily edible TOFU (bean curd) rich in nutrition, by immersing raw material soybeans in a low alkali solution, grinding, boiling, then separating bean-curd refuse, adding a coagulant to give a coagulated material, dehydrating the coagulated material, kneading the coagulated material with seasoning, etc., forming, processing, sterilizing under heating and then freezing. CONSTITUTION:Raw material soybeans are immersed in a low alkali solution, deodorized, decolored, ground, boiled, separated from bean-curd refuse, the prepared soybean milk is mixed with a coagulant to give a coagulated material, which is dehydrated, washed with water, dehydrated again, blended with seasoning, an extender, a binder and a stabilizer while grinding, kneaded, formed, processed, sterilized under heating, frozen into a disk ingredient, cooked and processed to give modified TOFU. |
