PURPOSE:To efficiently produce the titled syrup, by reacting a partial starch hydrolyzate with an enzyme or acid with a saccharifying type alpha-amylase and glucoamylase in combination and then reacting a transferase or together with a debranching enzyme. CONSTITUTION:An acid liquefied starch or enzyme liquefied starch (preferably the latter) is reacted with three enzymes of saccharifying type alpha-amylase in an amount of about 0.001-1.0% based on a substrate (solid), glucoamylase in an amount of about 0.001-1.0% based on the substrate (solid) and transferase in an amount of about 0.001-1.0% based on the substrate (solid) in combination or four enzymes of saccharifying type alpha-amylase in an amount of about 0.001-1.0% based on the substrate (solid), glucoamylase in an amount of about 0.001-1.0% based on the substrate (solid), transferase in an amount of about 0.001-1.0% based on the substrate (solid) and a debranching enzyme in an amount of about 0.001-1.0% based on the substrate (solid) in combination to carry out reaction at 40-65 deg.C and pH3.0-7.0, 10-60% substrate concentration (solid) for about 40hr saccharifying time to afford the aimed high conversion syrup consisting essentially of isomaltose and glucose. |
