PURPOSE:To readily obtain the titled compound useful as a sweetener in short process, by using a compound capable of readily synthesizing from L- phenylalanine methylester and maleic anhydride at a low cost as a raw material and subjecting the compound to debenzylation reaction. CONSTITUTION:cis-3-Carboxyacryloyl-L-phenylalanine methylester with benzyla mine in a solvent such as dioxane at room temperature - temperature of boil ing point of the solvent to provide a compound expressed by formula II, which is then catalytically reduced in a solvent such as acetic acid using a catalyst such as palladium carbon at room temperature - 80 deg.C to provide the aimed beta-L-aspartyl-L-phenylalanine methylester. Selective protection of functional group is not required, because aspartic acid is not used as a raw material.
