PURPOSE:To obtain raw Chinese noodles consisting of natural innocuous substances, having excellent shelf stability, taste and color, by blending wheat flour and optionally glutinous rice with dogtooth violet starch, salt, colorful natural food for coloring, vinegar and water. CONSTITUTION:25pts.wt. wheat flour such as glutinous flour is optionally mixed with 0-0.5pt.wt. glutinous rice and blended with 4-10pts.wt. dogtooth violet starch, 0.05-0.15pt.wt. salt, 1.5-3pts.wt. colorful natural food for coloring, 0.08-0.18 vinegar and 8-13pts.wt. water by a mixer, etc., and the prepared blend is mechanically processed into noodles. |
