PURPOSE:To contrive to improve antimicrobial action, by adding a glycerin difatty acid ester containing two kinds of saturated fatty acid residue in the molecule to a plastic water-in-oil type emulsified fat and oil composition. CONSTITUTION:A plastic water-in-oil type emulsified fat and oil composition containing 0.05-5.0wt.% glycerin difatty acid ester having 6-12C saturated fatty acid residue and 14-24C saturated fatty acid residue in the molecule. The glycerin difatty acid ester used is a glycerin difatty acid ester wherein -OH groups at the 1-position and the 3-position of glycerin or -OH groups at the 1-position and the 2-position are esterified with fatty acids. the plastic water- in-oil type emulsified fat and oil composition is effective especially in the case where a nitrogen-containing compound is contained in a water phase. The contents of the oil phase and the water phase of the composition is especially preferably 1.2-20 oil phase based on 1 water phase in terms of stability of the composition. |
