PURPOSE:To obtain the titled decomposition product without generating undissolved material, by mixing a protein (or proteineous substance) and a dissolution assistant into dissolving water, etc., adding a proteinase to the mixture, measuring the viscosity of the solution and terminating the digestion reaction at a a specific viscosity. CONSTITUTION:A protein (e.g. acid casein) or a protein-containing substance and a dissolution assistant (e.g. sodium carbonate or potassium carbonate) are mixed and dissolved into dissolving water. The solution is thermally sterilized, cooled and adjusted to a specific pH while keeping at a specific temperature. The obtained solution is digested by the addition of pancreatin and one or more proteinases such as protease originated from Bacillus genus. The viscosity of the solution is measured with time and the digestion reaction is terminated by heating the solution at a high temperature before the lowering of the viscosity after temporary increase of the viscosity. The objective decomposed product can be prepared by this process. |
