PURPOSE:To obtain the titled material capable of remarkably exhibiting physiological activity even after heating with hardly any loss in physiological activity of proteins by heating, by containing the proteins having physiological activity with polyglycerol condensed ricinoleic acid ester. CONSTITUTION:The aimed material containing proteins selected from proteins, salts and derivatives thereof having physiological activity with polyglycerol condensed ricinoleic acid ester together. Furthermore, e.g. alpha-L-aspartyl-L- phenylalanine, which is a sweetener is cited as the proteins having the physiological activity. |
