PURPOSE:To obtain foods such as sausage without causing viscous greasiness and damaging a coating film during heating, by simultaneously extruding mixed dispersion of collagen and cellulose and a food ingredient and coating the surface of the food with a mixture of a collagen and cellulose. CONSTITUTION:A collagen dispersion is blended with 5-50wt.% (dried weight). The blend and a food ingredient are simultaneously extruded to give a food such as sausage having the surface of the food ingredient coated with a mixture of collagen and cellulose. The prepared food will not cause viscosity on the surface and will not damage commercial value. |
