PRODUCTION OF FOOD AND DRINK

摘要

PURPOSE:To obtain foods and drinks using a glucide serving as sucrose, slightly causing dental caries, containing isomaltosyldiglucose or isomaltosyltriglucose. CONSTITUTION:For example, (A) foods and drinks having low dental caries properties or bifitus mold multiplying promotion are blended with (B) sucrose and (C) >=5w/w% based on sum of isomaltosyldiglucose or isomaltosyltriglucose. The prepared foods and drinks have elegant sweetness, forming neither insoluble glucan by dental caries causing bacteria nor acids and suppress formation of insoluble glucan by sucrose. The foods and drinks are useful as a sweetener for cosmetics and drugs besides a sweetener for foods.
