CONSTITUTION:Foods are subjected to dehydration treatment to uniformly dehydrate the foods, supercooled in a static state to <=the freezing temperature of the foods, the supercooling temperature is released and further cooling is continued. The dehydration treatment is preferably carried out in such a way that the foods are brought through a water-permeable semipermeable membrane into contact with a solution having higher osmotic pressure than that of the foods. As the method to release the supercooled state, the foods in a supercooled state are preferably shocked by sound wave, etc.
