PURPOSE:To extremely readily prepare a large amount of white ADZUKI beans from ordinary ADZUKI beans, by swelling the ordinary ADZUKI beans, freeze- drying the swelled ADZUKI beans and peeling epidermises thereof by physical force. CONSTITUTION:Ordinary ADZUKI beans are dipped in water for about 24hr to provide swelled ADZUKI beans sufficiently containing water. The resultant swelled ADZUKI beans are then prefrozen at -20 deg.C temperature to convert water therein into fine ice crystals and the prefrozen ADZUKI beans are subsequently vacuum freeze dried at -25--30 deg.C under about 1Torr vacuum degree. Physical force is then applied to the vacuum freeze-dried ADZUKI beans to peel epidermises thereof. |
