PURPOSE:To obtain NATTO with meat a novel food, having both vegetable and animal nutrition, good digestibility and excellent shelf stability free from bitterness and a bad smell, by heat-treating granules consisting of beef or pork, blending the granules with steamed soybeans and Bacillus natto and fermenting. CONSTITUTION:Meat selected from beef, pork, fish meat, etc., is made into minced meat or a size of soybean, blended with wheat flour and, if necessary, water, etc., and processed into granules. Then the granules are heat-treated, made into approximately spherical solid materials, blended with steamed soybeans and Bacillus natto ad well stirred. Then the blend is packed into a given container and aged at 35-45 deg.C for 20hr to give the aimed food. |
