PURPOSE:To obtain sweet roasted chestnuts having a readily peelable pericarp with excellent color and luster even in preserving for a long period without deteriorating flavor of fruits, by cooling roasted chestnuts, coating the pericarpial surfaces with a shellac resin solution in an alcohol in a specific concentration, drying the coating layers to form films, hermetically sealing and packaging the chestnuts. CONSTITUTION:Roasted chestnuts are cooled to ordinary temperature or below and the pericarpial surfaces are then coated with a shellac solution in an alcohol in 15-32%, preferably 18-20% concentration and dried to form films of the shellac resin. Thereby the resultant roasted chestnuts are hermetically sealed, packaged and stably preserved for a long period. |
