发明名称 METHOD FOR THAWING-COLD RESERVING OF COLD SMOKED FOOD
摘要 PURPOSE:To thaw the titled food with good flavor without excessive drying and improve processability after thawing, by increasing temperature of a cold smoked food in a state of freezing preservation under specific condition, then thawing the food at a high humidity, directly cooling and preserving the food. CONSTITUTION:Temperature of a cold smoked food frozen, preserved at <=-25 deg.C is initially increased to -12--8 deg.C until the interior and exterior attain an uniform temperature. The above-mentioned food is subsequently thawed at a high humidity of 90-98% and the thawed food is then directly cooled at -2-0 deg.C and preserved.
