<p>PURPOSE:To obtain colored SAKEs (Japanese rice wines) colored to red color, by brewing a raw material containing tannins as a charging raw material, pressing the fermented unrefined SAKE and irradiating the resultant SAKE with electromagnetic waves to color the SAKE. CONSTITUTION:A raw material containing various tannis (preferably catechin, catechol tannin or phlobaphene) is used as part or all of the charging raw material and brewed to press the fermented unrefined SAKE. The resultant pressed SAKE is then irradiated with electromagnetic waves (preferably indirect rays of sunlight, direct rays of sunlight, visible, ultraviolet or infrared rays) and colored to afford the aimed colored SAKEs containing tannis, polymers, derivatives and/or complexes thereof as colored ingredients.</p> |
