PURPOSE:To produce fruit chips having chewy, moderately expanded light and crispy texture, by subjecting a banana cut into small pieces at a regulated temperature to expansion treatment and heating the expanded banana small pieces under reduced pressure. CONSTITUTION:The material temperature of a peeled banana cut into small pieces having 3-5mm thickness is regulated to 5-20 deg.C. The small pieces of the above-mentioned banana are then quickly decompressed from normal pressure to, e.g. 150-500 Pa pressure within 1min, so that a given vacuum degree may be attained within 20min from cutting the banana, kept under the afore- mentioned vacuum degree for 5-15min and subjected to expansion treatment. The expanded banana is subsequently heated at about 60-90 deg.C under a lower vacuum degree, e.g. 20-50 Pa, than that in the expansion treatment and dried. |
