The machine forms a loop of string under the sausage, the central section of the loop being taken up by a hook with a forked end which is directed towards the crossed sections of the loop over the sausage. The hook, in its most forward position, passes the central section of the loop from its external branch to its internal branch by means of an auxiliary hook, in such a way that the backward motion of the loop itself forms a knot around the sausage skin.
