PRODUCTION OF RED PIGMENT

摘要

PURPOSE:To effectively obtain an anthocyanin-type red pigment useful as a food dye, by inducing a callus from Ipomoea batatas (sweet potato) using tissue culture process and culturing the callus in a specific medium under low illumination. CONSTITUTION:A sliced tissue of plant such as root, stalk or leaf of Ipomoea batatas is placed on an agar medium to induce a callus. The objective red pigment can be produced by culturing the callus in a medium containing >=2g/l, preferably 3-8g/l of KNO3 and 0.2-1.0g/l of (NH4)2SO4 under low illumination (preferably 1,500-10,000Lux) preferably at 20-30 deg.C.
