PURPOSE:To prepare edible fish meal having the property of fresh meat and high quality, leaving water-retainability and seasoning property and suppressing the denaturation of protein as far as possible, by dehydrating a slurried raw material by osmotic pressure and extracting and removing oil and fat components with an extractant gas. CONSTITUTION:Raw fish or fish meat is cut or ground at <=40 deg.C to obtain a slurry raw material for cooking, which is adjusted to pH5.5-10 according to the need. The pH-adjusted cooking raw material is added with a protein- denaturation preventing agent such as sugars and polymerized phosphoric acid salts and dehydrated to a water-content of <=50% by osmotic pressure using edible sugars, polymeric absorbent, packed semipermeable membrane bag, etc., as osmotic pressure dehydrating material. The dehydrated cooking raw material is made to contact with high-pressure liquefied gas or supercritical gas as a solvent to extract and remove oil and fat from the material. |
