PURPOSE:To obtain xanthane gum which has good dispersibility and solubility and an reach the final viscosity within a short time without forming any unwetted agglomerates, by treating xanthane gum with a surfactant. CONSTITUTION:Xanthane gum is treated with a surfactant, such as polyglycerol fatty acid, esters, sugar fatty acid esters, lecithin, enzymatically treated lecithin or lysolecithin each of which is highly safe and acceptable as food additives. The polyglycerol fatty acid ester is a fatty acid ester, HLB>=8, of a polyglycerol of an average degree of polymerization of 2-20, and when this HLB is lower than 8, no effect can be attained. Said lecithins include yolk lecithin, etc. in addition to lecithin obtained from a purification process of a vegetable oil, and its content is preferably 30% of higher. |
